Emily Entertains - Exceptional Everyday Eats

Hi readers, it’s Emily and Kerry here. Instead of talking about all the chocolate everyone has probably eaten over Easter, we decided to write about all the healthy cooking that I, Emily, am doing.

 

As some of you know, I live in supported accommodation, so I share a kitchen with my three housemates but we tend to prepare our own meals. I like to cook, and have enjoyed preparing lots of dishes this last year.

 

I’ve taken photos, and even videos of me preparing some of these, which I shared with Kerry and Laura. They suggested I start a vlog, perhaps on PFD’s website, to show others how easy it is to prepare some healthy and tasty dishes.

 

Today I made ratatouille, bursting with flavour and so healthy, with onions, garlic, chilli, oregano, aubergines, red pepper, courgettes and tinned tomatoes. I’ll eat it tomorrow to give the flavours time to absorb. I’ve also made sweet and sour chicken, a lemon and lime drizzle cake for Mum’s birthday, vegetable lasagne, chicken and vegetable stew, chicken and mushroom pasta, BBQ chicken, minced beef and onion pie, macaroni and cheese bake plus more! Maybe less healthy, but yummy was the Malteser cheesecake, to share of course!

 

It's harder, for me Kerry, to cook, because of my physical disability, but with support it is possible. It is great to see Emily doing all this cooking using fresh ingredients, and even if some of them are not all that healthy, it’s ok to have a naughty treat once in a while.
